I sometimes feel like we celebrate Cinco de Mayo all summer long. Mexican food and margaritas become a regular part of our diet during the summer months. Our favorite Mexican restaurant has a rooftop deck and weekends often find us there with friends.
Cinco de Mayo, often confused in the States as Mexican Independence Day, is actually a celebration of the Mexican army’s triumph over French forces in the Battle of Puebla. The “fifth of May” is a day to celebrate national pride among Mexican-Americans. The rest of our country hops on the bandwagon with an opportunity for a party.

What a way to celebrate Cinco de Mayo!!! I know what you mean about celebrating it year round. ๐
Hi Bill: everything looks delist but I am diabetic so I count carbs. Then I take a blood thinner & have to balance the Vit. K in my diet & stay within a specific range for my height/weight. I eat a lot of protein, tho I’m not crazy about meat (love cheese)…. These crazy restrictions are a pain. Are any of your wonderful dishes broken down by carb content & Vit k count? Any suggestions? Oddly I am not overweight at all! That’s because I struggle to find things I can eat. What I wouldn’t give for a qt of chocolate ice cream right now!
