BLT Pizza with Egg

I don’t usually think of pizza as typical breakfast food. Anytime we have leftover pizza from the night before, Jim is happy to eat it cold in the morning. Me? Not so much. But, I’m happy to eat BLT Pizza that I made for today’s post. This healthy pizza made with whole wheat crust makes the perfect breakfast, lunch, or dinner, and if you use store-bought pizza dough, you can put it together in just minutes.

We’re heading to Whistler, British Columbia for a ski trip this morning, so this post is short and sweet.

BLT Pizza with Egg

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 4 servings

BLT Pizza with Egg

Ingredients

4 strips bacon

1 pint cherry or grape tomatoes

4 eggs

4 cups mixed lettuce leaves

1 pound whole wheat pizza dough

3 tablespoon extra virgin olive oil, divided

Salt

Pepper

Instructions

1. Preheat oven to 425 degrees.

2. Brown bacon in a skillet. Remove from skillet, drain on paper towel, and roughly chop.

3. Transfer tomatoes to skillet and cook for 1 to 2 minutes, tossing frequently until skins starts to wrinkle. Remove from skillet.

4. Divide pizza dough into 4 balls. Roll out each ball into an 8-inch round. Place dough on 2 baking sheets and transfer to oven. Bake for 8 to 10 minutes until crust is golden brown.

5. While dough is cooking, add 1 tablespoon olive oil to skillet. Break eggs into skillet and cook to desired doneness. Season with salt and pepper to taste.

6. To assemble, divide tomatoes and lettuce among 4 pizzas. Drizzle with 2 tablespoons olive oil and season with salt and pepper to taste. Top lettuce with egg and sprinkle bacon over pizzas.

    Have a great time skiing! I have to admit I’m a fan of cold pizza for breakfast… but let’s be honest. This BLT pizza looks much better than any cold pizza could ever be.     I have to admit that I’m definitely a “cold pizza for breakfast” person (although sadly I rarely get pizza so it’s a rare treat at my house.) But this sounds wonderful as well!
