Ginger, Honey, and Lime Glazed Pork Chops

Glazed Pork Chop

Jim’s brother and sister-in-law sent us a package of pork chops from Allen Brothers for Christmas this year. I’ve had mixed results with mail order meat, but I have to say these pork chops were of superior quality. When I opened the package and saw the chops, I knew I wanted to do something special with them. You really can’t go wrong with a marinated, grilled, and glazed piece of meat and that is what I chose to do for this post.

Glazed Pork Chops

The marinade/glaze started with ginger, honey, lime, and soy sauce, but I kept playing with the concoction by adding ingredients. I made the chops this way a couple of times and I was very happy with the resulting flavor. These chops were about 1 1/4 inches thick, so I grilled them for four minutes on each side to get grill marks, and finished them in the oven.

I brushed the chops with glaze before they went in the oven. If you’re grilling them the entire time, I would add the glaze after the last turn. I would recommend always using a meat thermometer to ensure you are cooking to the proper temperature.

Prep Time: 8 hours

Cook Time: 10 minutes

Total Time: 8 hours, 10 minutes

Yield: 4 servings

Ginger, Honey, and Lime Glazed Pork Chops

Ingredients

4 bone-in pork chops

3 tbsp soy sauce

4 tbsp ketchup

2 tbsp Dijon mustard

3 tbsp honey

2 tbsp fresh lime juice

2 tbsp balsamic vinegar

2 tbsp extra virgin olive oil

2 tbsp minced fresh ginger

2 tbsp minced garlic

Instructions

1. Combine all marinade ingredients.

2. Reserve 1/4 cup of marinade in a small bowl and keep in refrigerator.

3. Pour remaining marinade into a large food storage bag.

4. Place pork chops in bag and refrigerate overnight.

5. Remove pork chops from bag and remove excess marinade.

6. Heat gas grill or grill pan on the cook top.

7. Grill pork chops to an internal temperature of 140 degrees.

8. During the last 3 or 4 minutes, brush reserved glaze on pork chops.

    First, these look grilled to perfection. Those grill marks! As for the glaze, I know this is a recipe I absolutely (sincerely) want to make. I’d say you did justice to the gifted chops.Next time I hit up Whole Foods, I’m buying some gorgeous bone-in chops for this recipe. BTW, we were sent some Kansas City NY Steaks. I was skeptical, but found that they were some of the tastiest I’ve ever had.
