Smashed New Potatoes

We spent a relaxing weekend in the North Carolina mountains with Bruce and Felix, so I didn’t get much cooking and blogging done. It was a weekend of great friends, great wine, and great food. We watched The Best Exotic Marigold Hotel and if you haven’t seen it, you should. Fantastic movie!

I was hoping to have a main course to post this week, but the dish I made Monday night was not a complete success and needs some tweaks. I’ll do a remake in the next few days. These potatoes served as the side and they were a success. They make a great accompaniment to a steak or pork tenderloin.

I love potatoes but we don’t eat them too often in an attempt to maintain weight. However, if we do eat them, this preparation is one of my favorites and comes together very quickly and easily. After baking, the potatoes are crispy on the outside and still soft and creamy on the inside. Yum!

Smashed New Potatoes

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4 servings

Ingredients

20 new potatoes (Gold Yukon or Red)

Extra virgin olive oil

Parmesan cheese

Instructions

1. Bring a medium size pot of salted water to boil.

2. Add potatoes and boil for about 15 minutes or until tender.

3. Preheat oven to 425 degrees.

4. Place potatoes on a baking sheet. Using a fork, flatten the potatoes. Be careful to not press to hard as the potatoes will fall apart.

5. Sprinkle potatoes with salt and drizzle with olive oil. Top with grated Parmesan cheese.

6. Bake for 10 to 15 minutes or until potatoes are browning and crispy.

    Somehow, I missed this post. These look like “Crash Potatoes” which were a food blogger’s sensation a few years ago. No matter what, I know that these are fantastic! Sometimes, I pour heavy cream over them. That’s extra naughty, but I gotta tell you– they are excellent. Your photo has me craving them again.
