I have an Italian in the house and I’m afraid I don’t satisfy his need for pasta nearly often enough. I love pasta, but I guess in the interest of limiting carbs and maintaining weight, it’s not on our regular menu rotation. The Mediterranean diet is a very healthy one, so I’m making the effort to let go of the idea that pasta equals weight gain. My weakness with a dish like this is a lack of portion control. I can eat my weight in pasta, so as I integrate more pasta in our diet, willpower is essential. It’s been a while, but I’ve made this pasta dish for many years and as pasta goes, it really is a healthy one. A reasonable portion of this pasta served with a salad and slice of whole grain bread is a healthy dinner. If you want to make this dish even healthier, you can use whole wheat pasta.
If you can find fresh sweet corn, use it for this dish. The sweetness adds a nice layer of flavor. Otherwise, frozen corn kernels can work. This pasta dish can be put together quickly and makes a great weekday supper.
Ingredients
4 boneless chicken breasts, grilled
2 cups fresh corn kernels
3 cups halved grape tomatoes
5 cloves garlic, minced
1 cup chopped flat leaf parsley
1/4 cup extra virgin olive oil
1 tsp salt
1 tsp pepper
1 lb linguine
Parmesan cheese
Instructions
1. Drizzle chicken breasts with olive oil.
2. Sprinkle with salt and pepper.
3. Grill chicken on gas grill or grill pan.
4. Slice chicken into bite-sized pieces and set aside.
5. Bring large pot of water to boil.
6. Salt water liberally.
7. Add linguine and cook according to packaging.
8. Heat olive oil in large skillet.
9. Add garlic and saute for 30 seconds.
10. Add corn and continue cooking for 1 minute.
11. Add salt and pepper.
12. Add tomatoes and cook for 3 minutes or until tomatoes start to soften.
13. Add chicken and cook for 1 minute.
14. Add pasta to the pan along with 1/4 cup of pasta water.
15. Mix well and cook for an additional 2 minutes.
14. Add parsley and mix well.
15. Drizzle with additional olive oil and add salt and pepper to taste.
16. Serve immediately topped with grated Parmesan cheese.

This bowl of pasta would definitely be very hard to resist! I love a simple little pasta dish and we always have grilled chicken leftover just for dishes like this! Corn – what a great addition!
