This recipe combines three classic southern vegetables: lima beans (we call them butter beans in the south), corn, and okra. One regular task that I was given when I was young was shelling and shucking butter beans, peas, and corn. Locally grown vegetables are plentiful in the South in the summer and we would have access to larger quantities of these vegetables to put in the freezer for the winter. A bushel of butter beans and corn was not unusual and shelling that many butter beans and shucking that much corn was quite a task.
Succotash is a delicious and inexpensive side dish that can be prepared any time of the year. Availability of frozen lima beans, corn, and okra make for a quick and easy preparation. This dish can be made vegetarian (and a bit more healthy) by using olive oil instead of bacon.
Ingredients
2 strips bacon, cut into 1/4 pieces
1 medium onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
2 cups frozen lima beans
2 cups fresh or frozen corn
2 cups fresh or frozen okra, sliced
1 1/2 cup grape tomatoes, cut in half
1/4 cup flat leaf parsley, chopped
1 cup chicken stock
2 tsp salt
1/2 tsp pepper
Instructions
1. Cook lima beans in chicken stock for 10-15 minutes or until they are tender, yet firm.
2. In a large skillet over medium heat, brown bacon.
3. Add onion, bell pepper, and garlic.
4. Saute for 5 minutes and add okra.
5. Continue cooking for 5 minutes.
6. Add cooked lima beans, corn, salt and pepper.
7. Cook for 5 minutes.
8. Add tomatoes and 1/4 cup of the chicken stock and cook until the tomatoes are soft, but not falling apart.
9. Before serving stir in parsley.
10. Add salt and pepper as needed.

What would you suggest in place of the lima beans ….this sounds fantastic but I cannot stomach Lima beans in anything … Thanks
