You can probably tell by other posts that I love roasted vegetables. For years my vegetable prep involved steam, but lately I’ve found that roasting vegetables adds a depth of flavor that I really like. This is a very easy and quick preparation for cauliflower.
I make vegetables an important part of eating in our house. Jim didn’t particularly like cauliflower until I started making it this way. I have to agree that steamed cauliflower can be a little dull, so now we’ve put in the regular rotation and he really enjoys it.
Ingredients
1 head of cauliflower, separated into florets
2 tbsp extra virgin olive oil
1/2 tsp salt
1/2 cup grated Parmesan cheese.
Instructions
1. Preheat oven to 425 degrees.
2. Place cauliflower in a bowl and add olive oil and salt. Mix well.
3. Pour onto baking sheet and spread evenly.
4. Roast for 10 minutes.
5. Turn baking sheet around in the oven and roast for 10 more minutes or until cauliflower starts to brown.
6. Remove from the oven and spread cheese over the cauliflower.
7. Serve immediately.
