Sometimes we buy six or seven bananas for cereal and after a week the last two are soft and turning black. That’s the time to drag out a banana bread or muffin recipe. Overripe bananas are perfect for such a breakfast treat. There’s nothing quite like a warm slice of banana blueberry bread with butter. A cup of latte with this treat and I’m good to go for the morning.
Ingredients
1 cups unbleached all-purpose flour
1 cup whole wheat flour
3/4 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1 cup fresh blueberries, rinsed and drained, or frozen blueberries
1 cup mashed ripe bananas (2 to 3)
1/2 cup low-fat yogurt
6 tablespoons butter, melted and cooled
1 large egg
Instructions
1. Preheat oven to 350.
2. Grease and flour a 9"x5" loaf pan.
3. Whisk all dry ingredients together in a large bowl.
4. Add slightly beaten egg, yogurt, banana, and butter.
5. Mix well.
6. Carefully fold in blueberries.
7. Pour batter into loaf pan and bake for 60-70 minutes or until an inserted toothpick comes out clean.

I made your lemon icebox pie and was thoroughly impressed. It is so simple but was loved by everyone. I particularly enjoyed your discussion of your Mississippi roots. I think sometimes it is difficult for others to understand our pure joy and love of food. Breaking bread, sharing a meal, is what we southerners do. I just wanted you to know how much I enjoyed reading your material, as well as reading our recipes. I certainly intend to follow more of them. Keep up the great work! Thanks from Hattiesburg, MS!
I Love this~~ Thanks Bill, I can’t wait to try your delicious recipies…
